Fair warning: this recipe was made up on the fly and not written down.
I started with these guys, and ended up adding in applesauce, nutmeg, and allspice.
These guys:
Basically, I went with the usual ingredients for choc chip cookies, and then I threw in some pumpkin-y things, as you do.
Soooo: In one bowl, combine:
2 cups flour
1 cup oats
1 tsp cinnamon & a dash of the other spices
1/4 tsp baking powder
1/2 tsp salt
In another bowl cream together:
1 cup butter (2 sticks, you’re welcome)
3/4 cup firmly packed brown sugar
1/4 cup sugar
And to make myself feel better I, well actually Gracie, subbed in applesauce for some of the sugar, about 1/2 cup. But then I added a tablespoon of molasses, just because.
Mix that junk together annnnnd,
Add in: 1 egg (beaten before adding)
1 tsp vanilla
Mix wet and dry ingredients together.

More fair warning- grating fresh nutmeg might make you feel a little bit pretentious. Do it anyway, about half a teaspoon is fine, and then sprinkle in.
Add in the can o’ pumpkin and then fold in chocolate chips (or if you’ve discovered the brilliance of Krogers “chocolate drops” which are twice the size of chocolate chips, use them.)
Fair warning number 3- this batter is ridiculously ah-mazing.
Don’t forget to trim your own bangs before you taste it; it’s a really important part of the process.

Drop tablespoon size amounts onto a greased cookie sheet and bake at 350 for about 15 minutes.
They don’t really brown, so keep an eye on ‘em.
Bonus: Your house will smell frickin’ ah-mazing.
